Unniyappam-Unniappam, a traditional recipe and popular snack of Keralites, A fluffy deep-fried rice sweet fritter similar to Dutch Aebleskiver. is a variation of Neyiappam, where we add mashed banana. A quick, tasty and simple snack made with wheat flour, banana and jaggery. Unniyappam is one of the things that I always love to buy. Instructions to make Unniyappam:
  1. Wash and soak matta rice and red rice in water for 4-5 hrs.
  2. Melt jaggery with 1 cup of water and strain to remove impurities and keep aside.
  3. Fry the coconut pieces in ghee and coconut oil
  4. Grind the rice to a batter along with the jaggery and banana
  5. Add the ginger, cardamom powder, sesame seeds, the ghee fried coconut bits, salt and mix well
  6. Keep this batter in the fridge for fermentation for 5-6 hours.
  7. Heat equal amounts of ghee and coconut oil in a unniyappam or panniyaram kadai.
  8. Serve this while hot and enjoy the crispy, soft unniyappams
