Hey everyone, it’s me, Dave, welcome to my recipe page. Today, I will show you a way to make a special dish, roast chicken. One of my favorites. This time, I’m gonna make it a bit unique. This will be really delicious.

Place the onions, carrots, and fennel in a roasting pan. Spread around the bottom of the roasting pan and place the chicken on top. You can also spatchcock (aka butterfly) your chicken, or remove the backbone and flatten it out before roasting on a flat rack in a roasting pan or rimmed baking sheet. A spatchcocked chicken roasts more quickly and evenly and results in lots of crispy skin.

Roast chicken is one of the most popular of recent trending foods on earth. It’s simple, it is quick, it tastes delicious. It is enjoyed by millions every day. Roast chicken is something that I have loved my whole life. They are fine and they look fantastic.

To get started with this particular recipe, we must first prepare a few ingredients. You can have roast chicken using 8 ingredients and 5 steps. Here is how you can achieve that.

The ingredients needed to make Roast chicken:
  1. Prepare 1 whole chicken
  2. Take 1/2 c kikkoman
  3. Make ready 1/4 c knorr seasoning
  4. Take 10 calamansi, squeezed. Reserve the skin
  5. Make ready 4 cloves minced garlic
  6. Get 1 t crushed black pepper
  7. Get 1 t thyme or rosemary
  8. Take 1 small bag of baby potato

Spread the softened butter over entire surface of chicken, and sprinkle liberally with salt and pepper. When chicken seems done, insert an instant-read thermometer into the breast, then the thigh. Place chickens on a rack in a roasting pan, breast side up. Rub seasonings over outside and inside of chickens.

Instructions to make Roast chicken:
  1. Prep the chicken and wash potatoes. Set aside.
  2. Combine kikkoman, knorr, calamansi juice, garlic, pepper and thyme in a big Tupperware. Pour some of this mixture inside the chicken and stuff cavity with the 10 calamansi skins. Marinate chicken in the remaining mixture overnight, turning at least once to make sure all sides get marinated.
  3. Drain the chicken and set the marinade aside. Place chicken in a Pyrex or cast iron pan. Arrange potatoes around the chicken. Drizzle olive oil on all of it then pour the remaining marinade over the chicken and potato.
  4. Bake in a pre-heated oven for 70-90 minutes at 180 C. Start checking the chicken at the 60 minute mark
  5. For the sauce, just get the pan drippings after roasting the chicken and boil it quickly in a separate pan

Place chickens on a rack in a roasting pan, breast side up. Rub seasonings over outside and inside of chickens. Tuck under wings; tie together drumsticks. Most roast chicken recipes call for a shallow roasting pan fitted with a rack to elevate the bird. This ensures that hot air will circulate around the chicken, giving every inch a crispy, golden brown bake.
