  2. Mix all dry ingredients and season chicken.
  3. Put chicken in smoker and cook to internal temperature of 160°
  4. Brush chicken with barbecue sauce of your choice and continue cooking until internal temperature of 165° is reached.

Take a few hours to brine the chicken for the best results, stuff it with some onion, garlic, and lemon, and finally, rub it with delicious chicken dry rub. If using briquettes *see head note, two or three times during the smoking, add a handful of wood cuttings or chips on top of the lit charcoal.(Don't do this too much or else the meat will be overly smoky. Season the chicken, including the body cavity, with your favorite dry rub. Put the chicken in your smoker. Be sure there's a drip pan under the chicken, 'cause it's gonna drip some fat!
