Greek yogurt: This is a new addition to my regular Greek marinade. I added the yogurt after making my easy chicken gyros where the yogurt tenderizes the chicken for a very nice, juicy bite. The oil in the marinade is especially important when cooking chicken breasts as they are naturally lean and low in fat. Lemon juice AND zest - Lemon is a popular ingredient in many popular marinades and salad vinaigrettes.

To get started with this particular recipe, we have to first prepare a few ingredients. You can cook greek marinated chicken using 8 ingredients and 7 steps. Here is how you cook it.

The ingredients needed to make Greek Marinated Chicken:
  1. Get 1 cup plain Greek yogurt
  2. Get 4 tbs olive oil
  3. Get 4 cloves garlic - minced
  4. Get 1/2 tbs dried oregano
  5. Get 1 medium lemon, juice of
  6. Make ready 1/2 tsp salt
  7. Take 2 tbs dried parsley
  8. Make ready 2 lbs bone-in skin-on chicken (we like doing legs and thighs)

Instructions Place the chicken breasts in a large ziplock bag. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, pepper, rosemary, oregano and garlic. Pour the marinade over the chicken and seal the bag, squeezing out all the air. Thread strips onto skewers for souvlaki, or Greek Chicken Kabobs or Skewers then grill them outside or on a griddle.

Steps to make Greek Marinated Chicken:
  1. Mix everything except the chicken pieces together in a bowl.
  2. Place chicken in a gallon size ziploc bag. Add marinade. Seal bag, squeezing out as much air as possible. Squish bag around to distribute marinade evenly to all chicken pieces.
  3. Lay flat on a plate. Refrigerate at least 2 hrs, up to overnight.
  4. When ready to bake: Preheat oven to 375°F. Arrange chicken in a single layer, skin side up, in a 9x13 inch baking dish. Bake uncovered 45-60 minutes or until chicken is cooked through.
  5. Serve with any number of delicious sides, pasta, couscous, quinoa, and roasted potatoes are all good. Enjoy!

  7. Boneless skinless chicken can be used too, but remember because there is no added weight from bones and skin this means 2 lbs is more pieces of chicken. The marinade will work for a few extra pieces, but you may need a bigger (or second) baking dish.

Serve them as appetizers, or lay out tzatziki, hummus, tomatoes, cucumbers, onions, olives, tabbouleh, and warm pitas for diners to build their own pita wraps. For this recipe, I am using a Greek chicken marinade made with lots of garlic, lemon juice, herbs and lashings of olive oil is very versatile and can be used with any other meat, mushrooms or veggies.
