My twin sister recently returned from a trip to Kenya, and of all the delicious food she tried and described to me, some familiar and some completely new, the one that stuck with me the most was peanut soup. The ingredients needed to make Sweet Potato Peanut Bisque:
  1. Take 1 tbsp olive oil
  2. Take 1/2 onion, chopped
  3. Get 1 clove garlic, minced
  4. Take 1 tsp ginger, minced
  5. Prepare 2 green chili peppers, minced (Use what you like here according to taste.. the green chili peppers definitely have a kick. Jalapeño is less spicy, or you may wish to cut down or remove altogether.)
  6. Make ready 1/2 tsp allspice
  7. Prepare 1 1/2 cup tomato juice or vegetable juice blend
  8. Get 1 1/2 cup vegetable broth
  9. Get 1/4 cup natural peanut butter
  10. Take 2 sweet potatoes

Place the other half in a food processor or blender along with broth and peanut butter. I had a sweet potato bisque when I was back in college that reminded me a lot of pumpkin pie – I was hoping that this recipe might get me something similar. A very hardy and rich winter soup served with garlic toast. Most African peanut soup recipes include sweet potatoes.

Steps to make Sweet Potato Peanut Bisque:
  1. Prick sweet potatoes in several places with a fork. Microwave on High until just cooked through, 7 to 10 minutes. Set aside to cool. When cooled, peel, and cut into bite sized pieces. To save time, you can also pick up sweet potatoes already peeled and cut into chunks at many local grocery stores.
  2. Heat olive oil, add onion and cook, stirring, until it just begins to brown, 2 to 4 minutes. Add garlic and cook, stirring, for 1 more minute. Stir in green chilis, ginger, tomato juice, and allspice. Adjust the heat so the mixture boils gently; cook for 10 minutes.
  3. Meanwhile, blend half of the sweet potato chunks, the peanut butter, and the vegetable broth in a food processor, or use a hand blender to puree those ingredients together.
  4. Add the rest of the sweet potato chunks to the pot, cook another minute, and then add the puree mixture.
  5. Let it gently simmer another few minutes so all the flavors blend together. If desired, I like to chop up some peanuts and/or cilantro to top it off!

A very hardy and rich winter soup served with garlic toast. Most African peanut soup recipes include sweet potatoes. Potatoes, for a change, is the star of this bisque, giving you a hearty meal in a bowl.
